Apricot Pistachio Cake

Soft cake with lots of incredible flavors!  Moist, tangy olive oil cake, flavored with fresh orange zest, with plump dried apricots and pistachios inside.  Crowned with chopped pistachios pressed into our homemade apricot preserves.  9 inch cake, serves 8.
