In 1999, Chef Tammy Travis graduated from the French Culinary Institute in New York City. In the pastry program, she worked with Jacques Torres, the dean of the school, and he taught her a passion for the art of chocolate making. While in school full-time she also worked as a pastry assistant at a few local restaurants. After graduation, Jacques Torres hired Chef Travis as his pastry assistant at Le Cirque 2000 from 1999 to 2000. Le Cirque 2000 was a four star French restaurant located on 505 Madison Avenue, in New York City.
